Bacon Jelly

Ingredients:
- 1 pound bacon
- 1 onion, diced
- 3 cloves garlic, minced
- 1/2 cup brown sugar
- 1/4 cup apple cider vinegar
- 1/4 cup maple syrup
- 1/4 cup bourbon
- 1 teaspoon chili flakes
- Salt and pepper to taste
Instructions:
- Start by cooking the bacon in a skillet until crisp. Remove the bacon from the skillet and let it cool. Once cooled, chop the bacon into small pieces.
- In the same skillet, sauté the diced onion and minced garlic until softened.
- Add the brown sugar, apple cider vinegar, maple syrup, bourbon, chili flakes, salt, and pepper to the skillet. Stir well to combine.
- Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the flavors to meld together.
- Add the chopped bacon back to the skillet and continue to cook for an additional 5-10 minutes, or until the mixture thickens to a jelly-like consistency.
- Remove the skillet from heat and let the bacon jelly cool before transferring it to a jar or container for storage.
