Instructions:

  1. Start by cooking the bacon in a skillet until crisp. Remove the bacon from the skillet and let it cool. Once cooled, chop the bacon into small pieces.
  2. In the same skillet, sauté the diced onion and minced garlic until softened.
  3. Add the brown sugar, apple cider vinegar, maple syrup, bourbon, chili flakes, salt, and pepper to the skillet. Stir well to combine.
  4. Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the flavors to meld together.
  5. Add the chopped bacon back to the skillet and continue to cook for an additional 5-10 minutes, or until the mixture thickens to a jelly-like consistency.
  6. Remove the skillet from heat and let the bacon jelly cool before transferring it to a jar or container for storage.
