Chocolate Pie

Ingredients:
- 1 9-inch pre-made pie crust
- 1 cup sugar
- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 3 cups milk
- 4 ounces unsweetened chocolate, chopped
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- Whipped cream, for topping
- Chocolate shavings, for garnish
Instructions:
- Preheat your oven to 350°F (180°C).
- In a medium saucepan, whisk together sugar, cornstarch, and salt.
- Gradually whisk in the milk until smooth.
- Add the chopped chocolate and place the saucepan over medium heat.
- Cook the mixture, stirring constantly until it thickens and comes to a boil, this should take about 10 minutes.
- Remove the saucepan from heat.
- In a separate bowl, lightly beat the egg yolks.
- Gradually whisk about 1 cup of the hot chocolate mixture into the egg yolks to temper them.
- Pour the tempered egg mixture back into the saucepan with the rest of the chocolate mixture.
- Place the saucepan back on the heat and cook for another 2 minutes, stirring constantly.
- Remove from heat and stir in the butter and vanilla extract until well combined.
- Pour the filling into the pre-made pie crust.
- Bake in the preheated oven for 12-15 minutes until the filling is set.
- Allow the pie to cool completely, then refrigerate for at least 4 hours or overnight.
- Serve with whipped cream and chocolate shavings on top.
