Instructions:

  1. Preheat your oven to 350°F (180°C).
  2. In a medium saucepan, whisk together sugar, cornstarch, and salt.
  3. Gradually whisk in the milk until smooth.
  4. Add the chopped chocolate and place the saucepan over medium heat.
  5. Cook the mixture, stirring constantly until it thickens and comes to a boil, this should take about 10 minutes.
  6. Remove the saucepan from heat.
  7. In a separate bowl, lightly beat the egg yolks.
  8. Gradually whisk about 1 cup of the hot chocolate mixture into the egg yolks to temper them.
  9. Pour the tempered egg mixture back into the saucepan with the rest of the chocolate mixture.
  10. Place the saucepan back on the heat and cook for another 2 minutes, stirring constantly.
  11. Remove from heat and stir in the butter and vanilla extract until well combined.
  12. Pour the filling into the pre-made pie crust.
  13. Bake in the preheated oven for 12-15 minutes until the filling is set.
  14. Allow the pie to cool completely, then refrigerate for at least 4 hours or overnight.
  15. Serve with whipped cream and chocolate shavings on top.
