Instructions:

  1. In a heavy-bottomed saucepan, combine the milk, heavy cream, and half of the sugar. Heat over medium heat until it just begins to simmer.
  2. In a mixing bowl, whisk together the egg yolks, remaining sugar, and cornstarch until it forms a smooth mixture.
  3. Slowly pour half of the hot milk mixture into the egg mixture, whisking constantly to temper the eggs.
  4. Pour the egg mixture back into the saucepan with the remaining milk mixture. Cook over medium heat, stirring constantly, until the pudding thickens, about 5-7 minutes.
  5. Remove the saucepan from the heat and stir in the vanilla extract and a pinch of salt.
  6. Strain the pudding through a fine-mesh sieve to remove any lumps.
  7. Divide the pudding into serving dishes or ramekins and cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming.
  8. Chill the pudding in the refrigerator for at least 2 hours before serving.
