Viking's Vanilla Dream Pudding

Ingredients:
- 2 cups whole milk
- 1/2 cup heavy cream
- 1/2 cup sugar
- 1/4 cup cornstarch
- 4 egg yolks
- 2 teaspoons vanilla extract
- Pinch of salt
Instructions:
- In a heavy-bottomed saucepan, combine the milk, heavy cream, and half of the sugar. Heat over medium heat until it just begins to simmer.
- In a mixing bowl, whisk together the egg yolks, remaining sugar, and cornstarch until it forms a smooth mixture.
- Slowly pour half of the hot milk mixture into the egg mixture, whisking constantly to temper the eggs.
- Pour the egg mixture back into the saucepan with the remaining milk mixture. Cook over medium heat, stirring constantly, until the pudding thickens, about 5-7 minutes.
- Remove the saucepan from the heat and stir in the vanilla extract and a pinch of salt.
- Strain the pudding through a fine-mesh sieve to remove any lumps.
- Divide the pudding into serving dishes or ramekins and cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming.
- Chill the pudding in the refrigerator for at least 2 hours before serving.
