Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion, minced garlic, jalapeno pepper, and bell pepper. Sautee until the vegetables are softened, about 5 minutes.
  3. Stir in the chili powder and cumin, cook for another minute until fragrant.
  4. Add the canned beans (drained and rinsed) and diced tomatoes to the pot. Stir to combine.
  5. Season with salt and pepper, adjust seasoning to taste.
  6. Bring the mixture to a simmer, then reduce heat to low. Let it cook for about 20-30 minutes, stirring occasionally.
  7. Once the beans are heated through and the flavors have melded together, remove from heat.
  8. Serve the spicy pirate beans hot as a side dish or over rice as a main meal.
