Spicy Pirate Beans

Ingredients:
- 1 can of black beans
- 1 can of kidney beans
- 1 can of diced tomatoes
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 jalapeno pepper, diced
- 1 bell pepper, diced
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- Salt and pepper to taste
- Olive oil
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add the diced onion, minced garlic, jalapeno pepper, and bell pepper. Sautee until the vegetables are softened, about 5 minutes.
- Stir in the chili powder and cumin, cook for another minute until fragrant.
- Add the canned beans (drained and rinsed) and diced tomatoes to the pot. Stir to combine.
- Season with salt and pepper, adjust seasoning to taste.
- Bring the mixture to a simmer, then reduce heat to low. Let it cook for about 20-30 minutes, stirring occasionally.
- Once the beans are heated through and the flavors have melded together, remove from heat.
- Serve the spicy pirate beans hot as a side dish or over rice as a main meal.
