Recipe: Instapot Caribbean Jerk Chicken

Ingredients:
- - 4 large chicken breasts
- - 1/4 cup Caribbean jerk seasoning
- - 1 onion, chopped
- - 3 cloves garlic, minced
- - 1 bell pepper, sliced
- - 1 can diced tomatoes
- - 1 cup chicken broth
- - 1 tablespoon olive oil
- - Salt and pepper to taste
- - Fresh cilantro, for garnish
Instructions:
- - Rub the Caribbean jerk seasoning all over the chicken breasts.
- - Turn on the Instapot and set it to sauté mode. Add the olive oil.
- - Sear the seasoned chicken breasts on both sides until browned. Remove and set aside.
- - Add a bit more olive oil if needed, then sauté the onions, garlic, and bell pepper until softened.
- - Stir in the diced tomatoes and chicken broth.
- - Return the chicken breasts to the Instapot.
- - Close the lid and set the Instapot to manual high pressure for 10 minutes.
- - Once done, do a quick pressure release.
- - Carefully remove the chicken breasts and shred them using two forks.
- - Serve the shredded Caribbean jerk chicken with the sauce over rice or with a side of veggies.
- - Garnish with fresh cilantro.
