Instructions:

  1. - Rub the Caribbean jerk seasoning all over the chicken breasts.
  2. - Turn on the Instapot and set it to sauté mode. Add the olive oil.
  3. - Sear the seasoned chicken breasts on both sides until browned. Remove and set aside.
  4. - Add a bit more olive oil if needed, then sauté the onions, garlic, and bell pepper until softened.
  5. - Stir in the diced tomatoes and chicken broth.
  6. - Return the chicken breasts to the Instapot.
  7. - Close the lid and set the Instapot to manual high pressure for 10 minutes.
  8. - Once done, do a quick pressure release.
  9. - Carefully remove the chicken breasts and shred them using two forks.
  10. - Serve the shredded Caribbean jerk chicken with the sauce over rice or with a side of veggies.
  11. - Garnish with fresh cilantro.
