Jim's Air Fryer Dijon Salmon

Ingredients:
- 4 salmon fillets, skin on or off
- 1/4 cup of dijon mustard
- 2 tablespoons of honey
- 2 tablespoons of soy sauce
- 1 tablespoon of apple cider vinegar
- 2 teaspoons of minced garlic
- Fresh parsley and lemon slices for garnish
Instructions:
- Preheat your air fryer to 400°F and spray the basket with some oil.
- In a small bowl, whisk together the dijon mustard, honey, soy sauce, vinegar, garlic, salt, and pepper until well combined.
- Pat the salmon dry with paper towels and season with more salt and pepper if desired.
- Brush the sauce over the salmon, reserving some for later.
- Place the salmon in the air fryer basket, skin side down if using skin-on fillets, and cook for 10 to 15 minutes, depending on the thickness of your fillets. You can check the doneness with a fork or a meat thermometer. The salmon should flake easily and reach an internal temperature of 145°F.
