Instructions:

  1. In a small bowl, stir together the warm milk, brown sugar, and the yeast, and let it sit for about 5 minutes, until frothy.
  2. Attach the bowl and the dough hook to the mixer. Turn the mixer to low speed and gradually add the yeast mixture and the melted butter. Mix until a shaggy dough forms, then increase the speed to medium and knead for about 10 minutes, adding more flour as needed, until the dough is smooth, elastic, and pulls away from the sides of the bowl.
  3. Transfer the dough to a lightly greased bowl and cover with a tea towel. Let it rise in a warm place for about an hour, or until doubled in size. Punch the dough down and shape it into an oblong loaf. Place it on a parchment-lined baking sheet and let it rise for another 30 minutes. Slash the top of the loaf with a sharp knife and bake in a preheated oven at 425°F for about 25 minutes.
