Copilot's Kiolbassa Smoked Meats Beef Sausage Casserole

Ingredients:
- 1 package Kiolbassa Smoked Meats Beef Sausage, cut into rounds
- 2 cloves garlic, minced
- 1/4 cup onion, diced
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes, drained
- 1 cup uncooked quinoa
- 2 cups beef broth
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1 cup shredded cheddar cheese
Instructions:
- Preheat oven to 375°F and place the cast iron skillet in the oven while it heats up.
- In a separate skillet over medium-high heat, cook the sausage, garlic, and onion for about 15 minutes, stirring occasionally, until the sausage is browned, and the onion is soft. Transfer the mixture to a bowl and set aside.
- In the same skillet, bring the quinoa and beef broth to a boil, then reduce the heat and simmer until the quinoa is cooked and the broth is absorbed. Stir in the chili powder, cumin, salt, and cheese.
- Carefully remove the hot cast iron skillet from the oven and spray it with cooking spray or oil. Spread the sausage mixture evenly over the bottom of the skillet. Spoon the quinoa mixture over the sausage and sprinkle the black beans, corn, and tomatoes on top.
- Return the cast iron skillet to the oven and bake for 15 minutes or until the cheese is melted and bubbly.
