Jim's Nacho Stuffed Shells

Ingredients:
- 20 uncooked jumbo shells
- 15 ounces canned tomato puree
- 1 1/4 cups salsa (fat free is a option)
- 1/2 teaspoon garlic powder
- 2 tbs taco seasoning
- 1/2 cup water
- 1/4 cup reduced fat cream cheese (whipped is perferable)
- 16 ounces fat free canned re-fried beans
- 1 tbs chopped cilantro
- 1/4 cup fat free sour cream (optional)
- 1/2 lb uncooked ground turkey (beef if you perfer)
- Mozzarella cheese (optional)
Instructions:
- Preheat oven to 350F
- In large bowl stir together tomato puree, salsa and garlic powder. Spread 3/4 cup sauce mixture in bottom of a 13x9x2 inch baking pan. Reserve remaining sauce.
- Cook pasta as per instructions on box until al dente.
- Cook turkey in large skillet pan sprayed with cooking spray, over medium heat. (turkey no longer pink, beef till brown).
- Stir in taco seasoning, water and cream cheese, stirring until cream cheese is melted; simmer until thickened.
- Stir in refried beans and chillies.
- Fill cooked shells with filling (carefully as shells can rip).
- Place filled shells in prepared baking dish, top with remaining sauce.
- Cover with foil and bake 30 minutes; sprinkle with cheese and cilantro. if desired.
- Uncover and bake 5 to 10 more minutes.
- Serve topped with Cilantro and sour cream(optional).
