Ingredients:
- 1 (4-5 pound) bone-in pork shoulder roast
- 2 tablespoons olive oil
- 4 cloves of garlic, minced
- 1 tablespoon paprika
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- Salt and pepper to taste
- 1 cup chicken broth
- 1 onion, sliced

Instructions:
- 1. Preheat yer oven to 350°F (175°C).
- 2. In a small bowl, mix together the olive oil, minced garlic, paprika, thyme, rosemary, salt, and pepper to create a rub.
- 3. Pat the pork roast dry with paper towels and rub the spice mixture all over the roast, making sure to coat it well.
- 4. Place the sliced onions at the bottom of a roasting pan, then place the seasoned pork roast on top.
- 5. Pour the chicken broth into the roasting pan around the pork roast.
- 6. Cover the roasting pan with foil and roast in the preheated oven for about 3 to 4 hours, or until the pork is tender and easily shreds with a fork.
- 7. After the initial roasting time, remove the foil and continue to roast for an additional 30 minutes to allow the top of the roast to caramelize and develop a crispy crust.
- 8. Once done, remove the pork roast from the oven and let it rest for about 15 minutes before slicing and serving.
