  1. 1. Preheat yer oven to 350°F (175°C).
  2. 2. In a small bowl, mix together the olive oil, minced garlic, paprika, thyme, rosemary, salt, and pepper to create a rub.
  3. 3. Pat the pork roast dry with paper towels and rub the spice mixture all over the roast, making sure to coat it well.
  4. 4. Place the sliced onions at the bottom of a roasting pan, then place the seasoned pork roast on top.
  5. 5. Pour the chicken broth into the roasting pan around the pork roast.
  6. 6. Cover the roasting pan with foil and roast in the preheated oven for about 3 to 4 hours, or until the pork is tender and easily shreds with a fork.
  7. 7. After the initial roasting time, remove the foil and continue to roast for an additional 30 minutes to allow the top of the roast to caramelize and develop a crispy crust.
  8. 8. Once done, remove the pork roast from the oven and let it rest for about 15 minutes before slicing and serving.
