Instructions:

  1. Soak the dried red beans in water overnight.
  2. In a large pot, heat some olive oil over medium heat.
  3. Add the chopped onion, minced garlic, diced carrot, chopped bell pepper, and chopped bacon. Cook until the vegetables are softened and the bacon is crispy.
  4. Drain and rinse the soaked red beans, then add them to the pot.
  5. Stir in the cumin, paprika, and cayenne pepper.
  6. Pour in the vegetable broth and bring the mixture to a boil.
  7. Reduce the heat to low, cover the pot, and simmer for about 1-2 hours or until the beans are tender.
  8. Season with salt and pepper to taste.
  9. Serve the Martian Red Bean Stew hot.
