Martian Red Bean Stew

Ingredients:
- 1 cup dried red beans
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 bell pepper, chopped
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 4 cups vegetable broth
- Salt and pepper to taste
- Olive oil for cooking
- 7 slices Center Cut shoulder Bacon, chopped
Instructions:
- Soak the dried red beans in water overnight.
- In a large pot, heat some olive oil over medium heat.
- Add the chopped onion, minced garlic, diced carrot, chopped bell pepper, and chopped bacon. Cook until the vegetables are softened and the bacon is crispy.
- Drain and rinse the soaked red beans, then add them to the pot.
- Stir in the cumin, paprika, and cayenne pepper.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 1-2 hours or until the beans are tender.
- Season with salt and pepper to taste.
- Serve the Martian Red Bean Stew hot.
