Instructions:

  1. Preheat your grill to medium-high heat.
  2. Toss the sliced bell peppers, zucchinis, and red onion with some olive oil, salt, and pepper.
  3. Grill the vegetables until they’re charred and tender, about 4-5 minutes per side.
  4. In a large bowl, combine the cooked quinoa with the grilled vegetables and cherry tomatoes.
  5. In a small bowl, whisk together 1/4 cup olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing.
  6. Pour the dressing over the salad and toss to combine.
  7. Garnish with fresh herbs and serve either warm or at room temperature.
