- 4 cups cooked quinoa (ensure it’s gluten-free)
- 2 bell peppers, sliced
- 2 zucchinis, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup olive oil (for dressing and grilling)
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- Salt and pepper to taste
- Fresh herbs like parsley or basil, chopped
Instructions:
- Preheat your grill to medium-high heat.
- Toss the sliced bell peppers, zucchinis, and red onion with some olive oil, salt, and pepper.
- Grill the vegetables until they’re charred and tender, about 4-5 minutes per side.
- In a large bowl, combine the cooked quinoa with the grilled vegetables and cherry tomatoes.
- In a small bowl, whisk together 1/4 cup olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing.
- Pour the dressing over the salad and toss to combine.
