Garlic-Free Shrimp Scampi

Ingredients:
- 1 pound of shrimp, peeled and deveined
- 1/4 cup of olive oil
- 4 cloves of garlic (optional, for those who can handle it)
- 1/4 cup of white wine
- 1/4 cup of chicken or vegetable broth
- Juice of 1 lemon
- Salt and pepper to taste
- Red pepper flakes (optional)
- Chopped parsley for garnish
Instructions:
- In a large skillet, heat the olive oil over medium heat.
- Add the shrimp to the skillet and cook until they start to turn pink, about 2 minutes per side. Remove the shrimp from the skillet and set aside.
- If you're using garlic, add it to the skillet now and cook until fragrant, about 1 minute.
- Pour in the white wine and chicken or vegetable broth, then bring to a simmer.
- Add the lemon juice, salt, pepper, and red pepper flakes (if using) to the skillet.
- Return the shrimp to the skillet and cook for another 2-3 minutes, or until the shrimp are cooked through.
- Sprinkle chopped parsley over the shrimp scampi before serving.
