  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the shrimp to the skillet and cook until they start to turn pink, about 2 minutes per side. Remove the shrimp from the skillet and set aside.
  3. If you're using garlic, add it to the skillet now and cook until fragrant, about 1 minute.
  4. Pour in the white wine and chicken or vegetable broth, then bring to a simmer.
  5. Add the lemon juice, salt, pepper, and red pepper flakes (if using) to the skillet.
  6. Return the shrimp to the skillet and cook for another 2-3 minutes, or until the shrimp are cooked through.
  7. Sprinkle chopped parsley over the shrimp scampi before serving.
