Instructions:

  1. In a small bowl, mix together the rum, brown sugar, soy sauce, garlic, ginger, and black pepper to make the glaze.
  2. Heat the butter and olive oil in a large skillet over medium-high heat.
  3. Season the tilapia fillets with salt and pepper, then place them in the skillet.
  4. Cook the fillets for about 2-3 minutes on each side until they are golden brown and cooked through.
  5. Remove the fillets from the skillet and set aside.
  6. Pour the rum glaze into the skillet and bring it to a simmer.
  7. Return the tilapia fillets to the skillet and spoon the glaze over them.
  8. Cook for another 2-3 minutes, basting the fish with the glaze.
  9. Serve the rum-glazed tilapia hot with your favorite side dishes.
