Pirate's Rum-Glazed Tilapia

Ingredients:
- 4 tilapia fillets
- 1/4 cup dark rum
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon ground black pepper
- 2 tablespoons butter
- 1 tablespoon olive oil
Instructions:
- In a small bowl, mix together the rum, brown sugar, soy sauce, garlic, ginger, and black pepper to make the glaze.
- Heat the butter and olive oil in a large skillet over medium-high heat.
- Season the tilapia fillets with salt and pepper, then place them in the skillet.
- Cook the fillets for about 2-3 minutes on each side until they are golden brown and cooked through.
- Remove the fillets from the skillet and set aside.
- Pour the rum glaze into the skillet and bring it to a simmer.
- Return the tilapia fillets to the skillet and spoon the glaze over them.
- Cook for another 2-3 minutes, basting the fish with the glaze.
- Serve the rum-glazed tilapia hot with your favorite side dishes.
