Instructions:

  1. Season the flamingo breasts with salt and pepper.
  2. In a mixing bowl, combine the rum, orange juice, and brown sugar to make a marinade.
  3. Place the seasoned flamingo breasts in the marinade and let them sit for at least 30 minutes.
  4. In a skillet, melt the butter over medium-high heat.
  5. Remove the flamingo breasts from the marinade and sear them in the skillet for 3-4 minutes on each side or until cooked to your desired doneness.
  6. Pour the remaining marinade into the skillet and let it reduce until it thickens into a sauce.
  7. Serve the flamingo breasts drizzled with the rum and orange sauce.
