- 1 large eggplant
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions:
- Slice the eggplant into 1/2 inch rounds.
- In a small bowl, combine olive oil, garlic powder, paprika, salt, and pepper.
- Brush the olive oil mixture onto both sides of the eggplant slices.
