Buccaneer's Beef Stew

Ingredients:
- 1 1/2 pounds of beef stew meat, cut into cubes
- 4 cups of beef broth
- 1 onion, chopped
- 3 carrots, sliced
- 2 potatoes, peeled and diced
- 2 cloves of garlic, minced
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of dried thyme
- 1 bay leaf
Instructions:
- In a large pot or Dutch oven, heat some oil over medium-high heat.
- Add the beef stew meat and sear on all sides until browned, then remove from the pot and set aside.
- Add the chopped onion to the pot and sauté until softened.
- Add the minced garlic and sauté for another minute until fragrant.
- Return the beef stew meat to the pot and add the beef broth, carrots, potatoes, salt, black pepper, thyme, and bay leaf.
- Bring the stew to a boil, then reduce the heat to low, cover, and simmer for about 1 1/2 to 2 hours, stirring occasionally, until the meat is tender and the veggies are cooked through.
- Taste and adjust seasoning with more salt and pepper if needed.
