Instructions:

  1. In a large pot or Dutch oven, heat some oil over medium-high heat.
  2. Add the beef stew meat and sear on all sides until browned, then remove from the pot and set aside.
  3. Add the chopped onion to the pot and sauté until softened.
  4. Add the minced garlic and sauté for another minute until fragrant.
  5. Return the beef stew meat to the pot and add the beef broth, carrots, potatoes, salt, black pepper, thyme, and bay leaf.
  6. Bring the stew to a boil, then reduce the heat to low, cover, and simmer for about 1 1/2 to 2 hours, stirring occasionally, until the meat is tender and the veggies are cooked through.
  7. Taste and adjust seasoning with more salt and pepper if needed.
